Avoid Pouring Boiling Water Directly onto the Leaves

Because the opening of a zisha pot is small, it is easy to pour boiling water straight onto the tea and cause over-extraction. In the Chaozhou gongfu tea system, there is a clear way to avoid this.

If you pour with your left hand, place the teapot handle on the right side. Aim the stream toward the handle side or the wall of the pot, so the boiling water hits the bottom of the pot rather than the leaves. After the previous infusion, most leaves have piled near the spout, so this helps prevent over-extraction. If you are right-handed, do the opposite.

For the first infusion, the leaves are usually spread flat across the bottom, so it is harder not to hit them. In that case, you can pour through the spout.
